Prepare a delicious Veg Masala Fried Rice on this Diwali and have a nice meal with your family.

Servings: 3

Ingredients

For Cooking Rice
-1 heaped cup Hello Royal Basmati Rice 1121
– 3.5-4 cups water
– ½ tsp salt

For Steaming Veggies
– 1.5-2 cups chopped mix veggies
-2 cups water

Other Ingredients
-2 tbsp Britannia Pure Cow’s Ghee
-1 tej patta
– ½ tsp cumin seeds
– 1/3 cup thinly sliced onions
– ½ tsp ginger garlic paste
– 1/3 cup chopped tomatoes
– ¼ tsp turmeric powder
– ½ tsp red chilli powder
– ½ tsp coriander powder
– ½ tsp garam masala powder
– salt as required
-1-2 tbsp chopped coriander leaves
-2-3 tbsp chopped spring onion greens for garnish

Cooking Rice
-Rinse and soak 1 heaped cup Hello Royal Basmati Rice 1121 for 20mins.
-Boil 3.5-4 cups water and ½ tsp salt in a pan.
-Drain and add the rice to the boiling water.
-Stir well.
-Simmer the rice for 8-9 mins on medium flame.
-Once cooked, drain all the water and keep aside.

Steaming Veggies

-Rinse chopped veggies in a pan.
-Add 2 cups water & chopped veggies in a pressure cooker.
-Pressure cook for 3-4 whistles on medium flame.

Making Veg Masala Fried Rice

-Heat 2 tbsp Britannia Pure Cow’s Ghee in a kadai.
-Add 1 tej patta and ½ tsp cumin seeds.
-Then add 1/3 cup thinly sliced onions.
-Saute spring onions till translucent.
-Then add ½ tsp ginger-garlic paste.
-Add 1/3 chopped tomatoes and stir for 2-3 mins.
-Then add ¼ turmeric powder, ½ tsp red chilli powder, ½ tsp coriander powder and ½ tsp garam masala powder.
-Mix the spices for 1 min on low flame.
-Now add the steamed veggies and saute for 1 min.
-Then add the rice in 2 to 3 parts, mix roughly.
-When adding the last portion of rice, also add salt as per taste and mix very well.
-Lastly add 1-2 tbsp chopped coriander leaves.
-Serve Veg Masala Fried Rice garnished with chopped spring onion green.
